hey, peeps.

here's a recipe i thought you might enjoy. it's a finnish recipe for a dish called pannukakku.

5 eggs
1+1/2 cups milk
1+1/2 cups flour
5 tbsps butter, a little more than half a stick
1/2 tsp salt

* beat the eggs, *lightly* -- do *not* overbeat them
* add the milk, flour and salt and mix lightly -- do *not* overbeat, mix *gently*, undermix rather than overmix -- this is important
* let the batter thus formed stand at room temperature for one hour undisturbed
* preheat oven to 425 degrees Fahrenheit
* place a large deep iron skillet, or other baking dish if need be, in the oven, with the butter in it until the butter melts
* take the skillet out of the oven and immediately pour half the butter into the batter and mix it in *gently* -- do not overmix
* pour the batter into the skillet on top of the remaining butter and put into the 425 degree oven
* bake at 425dF for half an hour

It should puff up, somewhat like a giant popover though not quite so high as that proportionately speaking, yet it should puff up impressively nonetheless. And it tastes just marvelous! Serve it with maple syrup or with fruit and powdered sugar, or just eat it plain if you like, or use your imagination.
