hey, peeps.

here's a recipe for a lovely, tasty custard we've been having in this family for years.

3 eggs
2 cups milk
honey to taste, say 1/4 cup, perhaps a little sugar in addition
salt to taste, about 1/2 teaspoon generally
cinnamon to taste, generally just a sprinkling over the top
vanilla to taste, perhaps half a teaspoon of a good extract
the batter should taste good

* preheat oven to 350dF
* beat the eggs
* mix in the milk and honey (/sugar) and vanilla
* put in a pyrex bowl, inside a tray with water in it for temperature regulation
* sprinkle the top of the mixture with the cinnamon (or even mix in a little extra first if you like extra cinnamon, being mindful that it could turn the custard grayish if you add too much) -- enough for a light dusting over the top is a good amount
* bake at 350dF for 50 minutes to an hour or until done, which test with the standard knife test -- stick a clean knife into the center, and if it comes out clean, without liquid or particles adhering to it, then it has set and it's done.

the batter does not rise, but simply sets.

it's okay warm, but even better allowed to chill first.

hey, peeps.

there's this song out. it has lyrics that, in a piece of poetic license, puts the rolling thunder before the lightning flash. i have to wonder if the songwriter is going to be struck by lightning in a piece of poetic justice, and indeed whether poetic license in general is met with poetic justice.
